Named after “Professor” Jerry Thomas, an iconic 19th century bartender and cocktail pioneer, Vermouth del Professore is produced by a collaboration between the gourmet Federico Ricatto, the historic producer Carlos Quaglia and the passionate Jerry Thomas Speakeasy in Rome. A traditionally crafted product inspired by an ancient Piedmont recipe, the ingredients are the perfect aperitif according to Italian style.
Del Professore Vermouth is one of few types of vermouth on the market made solely from wine and ingredients produced in-house. Quaglia insists that this ensures the intensity and authenticity of the aromas within the vermouth, as they oversee the whole process from grape and herbs to the finished product

Spices, flowers, fruits
Biodiversity, Piedmontese history and an agricultural culture make for an incredible array of fine raw materials, which express the land from which they hail. Altitude, dry soils, hot days and cold nights: all these have an influence on the local herbs, fruit and flowers, creating highly concentrated aromas. Our distillery, with its own Piedmontese roots, produces and selects some of the spices itself. Others are sourced from small producers whose products express the specific organoleptic characteristics and quality excellence of their places of origin.

Picking the wild juniper berries from the mountain slopes, brushing and cleaning the wild gentian, extracting the small pink heart from the sweet rhubarb from the Lanzo and Soana valleys: these are just some examples of the work that goes into our products. They show how a good knowledge of the countryside and fine craftmanship can complement nature to bring out the best of her fruit. This is the art behind our range of distinctive products, an authentic expression of the work carried out and a constant quest for perfection crafted from imperfection.
